Cucumbers were thought to originate over 10000 years ago in southern Asia. Early explorers and travelers introduced this vegetable to India and other parts of Asia. It was very popular in the ancient civilizations of Egypt, Greece and Rome, whose people used it not only as a food, but also for its beneficial skin healing properties.

The cucumber is a widely cultivated plant in the gourd family Cucurbitaceae, which includes muskmelon.

Cucumber is a creeping vine that roots in the ground and grows up with support, wrapping around ribbing with thin, spiraling tendrils. The leaves are large and form a canopy over the fruit. The fruit is roughly cylindrical, elongated, with tapered ends. They are grown to be eaten fresh.

Varieties of cucumber:
• English cucumbers can grow as long as 2 feet. They are nearly seedless, have a delicate skin which can be eaten unpeeled.

• Slicers grown commercially for the North American market are generally longer, smoother, more uniform in color, and have a much tougher skin.
• Dosakai is a yellow cucumber available in parts of India. They are generally spherical in shape.

The flesh of cucumbers is primarily composed of water but also contains ascorbic acid (vitamin C) and caffeic acid. Both of these help soothe skin irritations and reduce swelling. The skin of cucumber is rich in fiber and contains a variety of beneficial minerals including silica, potassium, and magnesium. It also provides some dietary fiber, vitamin K, vitamin A, B6, thiamin, folate, pantothenic acid, phosphorous and copper.

Cucumber is a natural diuretic which is used in the fitness world to cut fat.

The phrase “cool as a cucumber” is not without merit. The high water content gives it a very unique moist and cooling taste.
